I have been cooking from the most wonderful recipe book for the past 4 weekends called 'The Green Roasting Tin'. My friends Henrietta and Simon bought it for my birthday last month and it is a fantastic collection of inspiring vegan/ vegetarian dishes that are cooked in one baking tray. We have eaten 3 bean chilli with avocado salsa, a wonderful dish of aubergine with tomatoes, harissa and almonds and last week it was roasted cauliflower with chickpeas, spring greens, lemon & tahini. I had to get this tasty tome for the store and share the joy of it as the recipes are so easy and fun - plus the washing-up is minimal! We serve the food in our beautiful botanical collection of bowls featuring Artichokes, Swiss Chard and Radishes, which seems appropriate as this winter it's all about veg!
