One of my favourite dishes on the planet, the classics are, of course, the sweet, caramelised apple version and the savoury onion tarte. These are assembled upside down in the tatin dish i.e. caramelised sugar, then apples and then cover with puff pastry and bake in the oven. One cooked, you take the Tarte Tatin out of the oven and leave to cool for 10 mins then place the serving platter on top of the dish, hold the handles, flip it over and remove the dish to reveal the perfect tarte! It is foolproof, impressive and delicious. Creme fraiche is lovely with the apple version or vanilla ice cream and a mustard mayonnaise really works with the onion. One doesn't have to be a purest either you can use different fruit in season - pears for example, apricots or cherries. Yum!
