I have indulged myself with a couple of new arrivals this week - the horror of this crisis has most definitely instilled a 'live for today' mentality and so I purchased the most wonderful cheese bakers from Emile Henry in France. These are perfect for brie, camembert, goats cheese, reblochon, coulommiers or any number of delicious cheeses. I think that our current situation has made me more gastronomically experimental and now I use what I have in the cupboard, so while Camembert is lovely baked with little shards of garlic and sprigs of rosemary plunged into it, on Thursday I threw caution to the wind and placed a tablespoon of homemade chilli jam (a gift from my saintly friend Henrietta, currently performing miracles on the front line at Child Protection Services) in the centre. The results were utterly scrumptious; salty, creamy, hot and sweet, served with griddled sourdough, this will be an obsession for weeks to come (although I might try some honey too). The cheese baker itself is extremely comely and so can be brought straight from oven to table. The lid allows for even baking and keeps flavour and odours in, prevents the cheese from drying out and will keep it warm, so perfect for dinner parties (when we are allowed to have them).
