This salad was many months in the making. In a previous home; the imperiously named Mundania Court, a 1930's apartment block with an interior courtyard, all our neighbours would leave their front doors open when they were home. This resulted in endless popping in and out of people's flats and a great sense of community, probably some shamed faces too no doubt!
It was open to abuse, however, as I discovered when one neighbour took to turning up every evening at supper time. I would prepare a big salad and we would all tuck in. Annoyingly, my neighbour would always apologies for hogging all the 'best bits'.
This became a challenge and a bit of a personal crusade finally in early September my salad was consumed without the exasperating 'best bits' aside. I had created the ultimate salad, a salad with just the good bits.
Just the Good Bits Salad
Layer tender endive and baby spinach leaves in your Roullier White salad bowl, add some thickly sliced avocado and some sliced pear, drizzle the pear and avocado with lemon juice to stop it going brown. Scatter over the smallest, sweetest cherry tomatoes you can find and then crumble on some Gorgonzola and top off with walnuts and toasted pine nuts and some seedless grapes.
Serve with a dressing of olive oil and freshly squeezed lime.
